Get glowing with this anti inflammatory soup🥣 #cookwithme #glow #soup #skincare #cookingtiktok Ingredients • 1 golden beet • 1 medium sweet potato • 2 large carrots • ½ large onion or 1 small onion • 2 celery stalks • ½ red bell pepper • ½ orange bell pepper • 2 cloves garlic • 1 inch fresh ginger • ½ inch fresh turmeric root • 3 to 4 cups broth (bone broth or vegetable broth) • ½ to ¾ can full-fat coconut milk • 1 tablespoon olive oil • ½ to ¾ teaspoon sea salt, to taste • ¼ teaspoon black pepper • Juice of ½ lemon • Optional pinch chili powder/paprika for spice Instructions 1. Heat olive oil in a large pot over medium heat. 2. Add all vegetables and seasonings, sauté till soft 3. Pour in broth until vegetables are just covered, about 3 to 4 cups. 4. Bring to a boil for 10-15 minutes 5. Turn off heat and blend directly in the pot using an immersion blender until smooth. 6. Stir in ½ to ¾ can coconut milk depending on desired creaminess. 7. Add lemon juice. Taste and adjust seasoning as needed. 10. Thin with additional hot broth or water if you want a lighter texture.
